·         Vegetable oil

·         Bananas

  [3]

·         2 pounds beef skirt steak

·         4 cloves garlic, minced

·         2 cups teriyaki sauce

How to make it

1.

1.      Heat olive oil in a skillet over medium heat. Sauté onion until lightly browned.

2.      Stir in garlic, curry powder, cinnamon, paprika, bay leaf, ginger, sugar, and salt. Continue stirring for 2 minutes.

3.       Add chicken pieces, tomato paste, yogurt, and coconut milk. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes.

4.      Remove bay leaf, and stir in lemon juice and cayenne pepper. Simmer 5 more minutes.

5.      Serve hot and enjoy!

2.

1.      Combine your dry ingredients (flour, sugar, salt, baking powder) in one bowl and your wet ingredients (egg, milk, vegetable oil, mashed bananas) in another bowl. Add the dry ingredients to the bowl with the wet ingredients, then stir until they’re incorporated. It’s OK if your batter is slightly lumpy.

2.      Pour the batter in ¼ cup portions onto a lightly oiled pan or griddle over medium-high heat. Cook for a few minutes, flip with a spatula, and cook for another few minutes (or until each side is golden brown).

3.      Serve your banana pancakes immediately. They’re delicious alone or with your favorite pancake toppings.

3.

1.      Cut the skirt steak into individual strips for serving. Add the garlic to the teriyaki sauce. In a re-sealable plastic bag, combine the steak and the sauce. Seal tightly and refrigerate to marinate overnight.

2.      Preheat oven to broil OR preheat a barbecue grill.

3.      When oven OR grill is ready, remove meat from bag and discard remaining marinade. Place meat on a broiler pan for the oven OR directly on the grill for the barbecue. Cook for about 5 minutes per side, or to desired doneness.

·         1 tsp tamarind puree

·         1/3 cup kecap manis

·         2 tbsp lime juice

·         200g tofu puffs, sliced

·         400ml can coconut cream

·         6 eggs

·         ½ cup caster sugar

·         1 ½ cups glutinous rice flour

·         1/3 cup grated dark palm sugar

·         565g can jackfruit, drained, rinsed, chopped

·         1 star fruit, sliced

·         ¼ (275g) papaya, deseeded, peeled, chopped

How to make it

1.

1.      Roughly chop the white part of 1 lemongrass stalk. Place in a small food processor. Add onion, ginger, garlic, chilli, turmeric and 2 tablespoons coconut milk. Process until a smooth paste forms.

2.      Using a rolling pin or meat mallet, gently pound remaining lemongrass stalk. Place in a wok. Add spice mixture, bay leaves and remaining coconut milk. Stir to combine. Add beef, turning to coat. Place wok over medium heat.

3.      Cook, stirring occasionally, for 2 hours 30 minutes, or until the coconut milk has almost completely evaporated and the beef is frying in the coconut oil. Towards the end of cooking, press the meat firmly with a wooden spoon to break apart and shred.

4.      Remove and discard lemongrass stalk and bay leaves. Season with salt and pepper. Sprinkle ending with tomato.

2.

1.      Heat 1 cup oil in a saucepan over medium heat. Cook peanuts, in 2 batches, for 2 to 3 minutes or until golden. Using a slotted spoon, transfer to a processor. Discard oil. Process until peanuts are roughly chopped. Transfer to a bowl.

3.      Heat remaining oil in a wok over medium-high heat. Cook eschalot mixture for 3 to 4 minutes or until fragrant. Add peanuts, lemongrass, palm sugar, tamarind, ¼ cup kecap manis, lime juice and 1 ¼ cups cold water. Season with salt. Bring to a simmer. Simmer, stirring to prevent splitting, for 5 minutes or until thick and fragrant.

4.      Arrange tofu puffs on a plate. Top with beansprouts and peanut sauce. Drizzle with remaining kecap manis. Sprinkle with fried shallots. Serve.

3.

1.      Preheat oven to 180°C/160°C fan-forced. Grease a 6cm-deep, 18cm (base) springform pan. Whisk coconut cream, eggs, caster sugar and a pinch of salt together in a large bowl. Slowly add rice flour, whisking to combine. Pour mixture into prepared pan. Bake for 1 hour 20 minutes or until puffed and golden. Stand in pan for 5 minutes. Using a flat-bladed knife, gently loosen edges from pan. Turn out onto a large plate.

2.      Place palm sugar and 2 tablespoons cold water in a saucepan over medium heat. Bring to the boil, stirring until sugar has dissolved. Boil for 1 minute or until slightly thickened. Remove from heat. Cool for 10 minutes. Combine fruit in a bowl.
